Cryogenic freezing differs from immersion freezing, as in the first process, the refrigerant does not change its state, it only exchanges sensitive heat, and in the second, the refrigerant changes its state, with the exchange of latent heat. It explains the very high rates of heat exchange, which leads to almost instant freezing.

Foran cryogenic cabinets use liquid nitrogen for discontinuous cooling and freezing. A controlled injection of cryogenic gas lowers the temperature inside the cabinet while the gas evaporates immediately. Latent heat of evaporation is the main source of cooling. Fans spread the gas in the cabinet in a controlled manner and efficiently transfer it to the product surface.
